What is Sodium Citrate?

Sodium Citrate is a sodium salt of an organic acid. It appears as white to colorless crystals with a cool and salty taste and is stable in the air. Its chemical formula is C6H5Na3O7. It is soluble in water but slightly soluble in ethanol. Its aqueous solution is slightly alkaline. It is commonly used as a buffer, complexing agent, and bacterial culture medium. In medicine, it is used as a diuretic, expectorant, and anticoagulant, and is also applied in food, beverages, electroplating, photography, and other fields. It is one of the basic reagents for biological experiments.

Application

1. Flavoring: It can adjust the acidity of food, improve the flavor, mitigate the irritation of other acidulants, enhance the overall flavor. In baking, it reacts with baking soda to produce gas and imparts a unique flavor.
2. Antisepsis and Preservation: It inhibits the growth of microorganisms by reducing the pH value, and chelates metal ions to prevent food from oxidation and deterioration.

 

3. Emulsification and Stabilization: As an emulsifier, it prevents the separation of oil and water; stabilizes proteins to prevent their coagulation and precipitation; stabilizes foam, making the foam last longer.
4. Antioxidant Synergism: When compounded with antioxidants, it chelates metal ions, enhances the antioxidant capacity, and prolongs the shelf life.
5. Leavening: In baking, it reacts with acidic substances to release carbon dioxide, making the food fluffy.
