What is Potassium sorbate?
Potassium sorbate, also known as 2, 4-hexadienate, is a potassium salt of sorbate with the formula C6H7O2K, colorless or white scaly crystal or crystalline powder. Odorless or slightly smelly, long-term exposure to the air is easy to absorb moisture, be decomposed by oxidation and discoloration. Soluble in water (58.2g/100mL at 20ºC), soluble in propylene glycol (5.8g/100mL) and ethanol (0.3g/10mL). Potassium sorbate and sorbate are common organic preservatives, widely used in food, cosmetics, feed preservatives. Easy to be absorbed and metabolized by the human body, no residue in the body, no toxicity.

Used to inhibit molds and yeasts in many foods, such as cheese, wine, yogurt, dried meats, apple cider, soft drinks and fruit drinks, and baked goods. Its breakdown to sorbitol, a sugar alcohol has been shown to increase the chances of a bowel movement from eating prunes.
